Chili Rellenos recipe For Mexican Food Lovers

Do you enjoy good Mexican food? If you do, I'm sure you've had Chili Rellenos (pronounced Ree-lay-nos). And, if you haven't, you don't know what you're missing. I'm going to give you instructions on how to make a yummy Mexican supper with my own Chili Rellenos method that will impress your family and your friends.

Now, you can only get Chili Rellenos at a true Mexican restaurant. You're not going to find these at Taco Bell or any other fast food joint. Probably because it requires more making ready time and won't qualify for a quick drive-up and take out item.

Poncho

The main ingredient of the Chili Rellenos method is the Poblano Pepper. This is a mild pepper that is of good size (approximately 5 inches to 6 inches) that can be stuffed honestly with your beloved cheese or mixture.

First of all, the chili peppers have to be roasted and the outer skin peeled off. Then slowly slice the pepper lengthwise and remove the seeds. Now you are ready to stuff the poblano. Although you can stuff the peppers with several mixtures, I use Monterey Jack cheese. You can use others, along with Pepper Jack cheese, to "kick the heat up" a few notches. Cut slices off a block of cheese and stuff it into the Poblano pepper, being right not to overstuff it.

The next step is to close the poblano with toothpicks, dust it in flour then dip them in a egg batter compound made of egg whites whipped into a meringue texture. Mix up the egg yolks with a tablespoon of flour and add to the meringue mix.

The final step is to slowly place the batter-dipped, stuffed poblanos into hot vegetable oil and cook, on both sides, until a light golden brown. Don't just drop the chili rellenos into the oil because splashing oil can cause severe burns and maybe a fire.

If you are going to eat the chili rellenos right away, put a slice of cheese on top of them and smother them with your beloved hot sauce. If you are going to eat them later, put them in the refrigerator covered with a paper towel. The next day (or days later) you can top them with a slice of cheese and pop them into the microwave. Just as good eating as when they were just cooked.

There you have it! Add some authentic Mexican refried beans from my refried beans recipe, top it with some "lip scorch'n hot sauce and you have a great tasting Mexican dish with my Chili Rellenos Recipe.

"Yours, From Wyoming" Author Robert W Howe - Book describe

Some citizen naturally breathe the air; others savor the aroma and fragrance in each and every breath. Some citizen would say "Hi" and smile at a stranger in passing, others lock eyes and share grinned greetings forming an intimacy and thus getting to know the man while the encounter.

To Robert W. Howe, the latter comes naturally, instinctively, and passionately. In his book entitled Yours, from Wyoming he ardently comprised scores of life's observations, meticulously articulated, in letters he wrote to others over years past. He weaved his experiences into a fabric of a article of humanity with almost divine grace and understanding. Uniquely printed using a scenery binding with portrait pages imprinted, yielding 4 pages per view, its published style somehow physically reminded me of trips to the wide open vistas of mountainscapes, fields and plains, rivers, and large sections of sky. The writing is gilded with a beautiful briefcase of illustrations by Vel Miller.

Like a song or a scent can trigger memories, for me landscapes now will trigger in my mind's eye a higher appreciation of the minutia of details, thanks to my new breathtaking mentor, Mr. Robert W. Howe.

My father and I headed out. My husband wanted to grab a bite to eat, but said he would be along. We headed up a path, climbing and circling around a hill. We spotted mushrooms down a slope so we both headed for them. We prolonged picking these mushrooms, working our way around the hill. To make a very long story shorter, we became lost.

We walked and walked. The temperature was cooling and it was getting dark. We walked for awhile and then decided we best start a campfire. Beginning a fire with a lighter is not an easy thing to do when your hands are so cold. But we managed. We were able to stay fairly warm by the fire.

In the length we heard honking, yelling, calling our names. We could see a light on an additional one hill. We yelled back, my Dad whistled (he could whistle pretty loud) and he kept whistling until his tongue swelled. I lost my voice from yelling. If only we had carried a whistle with us.

The weather that night wasn't too bad. It was chilly, but at least it was dry. But morning brought on cooler temperatures. We were both shivering as we walked on trying to find our way back. Later in the day it began to rain. This turned into a drenching downpour. There was surely no place to stay dry. No security anywhere. If only we had a rain poncho! So simple, but then we didn't plan on being lost.

Our clothing was drenched, we were surely cold now, and we had been surely quite cold since the night before. We were thirsty, but neither one of us wanted to drink any standing water. A water purifier would have been quite life salvage here. Hunger was an issue too, but not near as bad as thirst. Hypothermia sets in faster if you are dehydrated. And hypothermia makes you even more dehydrated. We were absolutely becoming hypothermic.

Later, we became separated. Something we had talked about was staying together. But we became separated for reasons that I will never understand today.

I remember frosty and shaking so bad that my body was bouncing on the ground. I'm sure my Dad was doing the same. That night temperatures were in the upper 40's and were were wet to the bone.

I was found the next morning by Pierce County search and rescue. My Dad, however, was not found for an additional one 2 days. His body was laying over a log, on a very steep slope. My mother and 3 brothers and I have visited this spot, where Dad was found, on a join of occassions. We bring his favorite candy bar, (Hershey bar with almonds) and a shot, and give a toast to our Dad, who we miss dearly.

This is why I propose being prepared. Always bring a compass, and know how to use it, a rain poncho, a pocket water purifier, a whistle and a fire started device would have been surely handy.
